Windows and Doors

One of my granny’s favorite sayings was, “When God closes a door, He opens a window.” Funny thing about windows and doors. They’re paired together not just in pithy sayings. You find them in the same section of most home improvement stores.. And in most people’s minds, they have similar functions.

But their differences are profound. While some doors have windows in them, they’re designed to keep people safe inside. Windows, on the other hand, are designed to let light in.

Cuisine is like that too. In the average person’s mind all ethnic foods have similar spices, are designed to be eaten, use the same basic ingredients, and represent a crucial aspect of a culture.

But sampling Japanese food and Indian food would quickly show you that even if the Japanese recipes and Indian recipes had similar ingredients, the proportions are different and the methods of cooking and seasoning are unique to each country.

Which is better, a door or a window? The answer is neither. We need both.
